Mandarin Orange Chicken and Make Ahead Meals


This post does have a recipe for Mandarin Orange Chicken, but first, I want to tell you about the best thing that has happened to dinner since I married Mr. Delish. My neighbor invited me to join her meal prep group at a local grocery store. If you have HyVee stores near you, call and find out if they offer Simple Fix Meal Prep.

Let me tell you why this meal group is amazing…I show up to a room and make one meal ten times, but I get to take home ten DIFFERENT MEALS! That is fantastic in and of itself, but here are the best things: 1) all the shopping is done for us; 2) some of the prep work has already happened; and 3) someone else washes all the dishes! After two months, we’ve eaten about thirteen meals and my kids only refused to eat one. In my world, that’s one for the win column!

Mandarin Orange Chicken

This month, I prepared Mandarin Orange Chicken. It was pretty simple to prep (we made it using the make freezer meal instruction noted). It was really fun this month, because I asked my 7 year-old daughter to be my assistant.  This recipe is from HyVee. Here are a few notes, gauge the amount of chicken to use while looking at the size of the chicken breasts. The recipe calls for three chicken breasts, but it was way too much chicken. I cut it down to only two in this recipe. I also reduced the amount of mushrooms in our dish, because we aren’t super fans. Finally, I suggest adding a vegetable like broccoli or green beans. I added steamed broccoli to the sauce near the end of heating, because I prefer veggies to be part of the main dish.

Mandarin Orange Chicken

Easy mandarin orange chicken recipe that can be used for a freezer meal.

Servings 4


  • 2 ea chicken breast, cut into 1 inch strips
  • 1/2 tbsp oil
  • 1 cup mushrooms, fresh and sliced
  • 1/2 cup oil
  • 2/3 cup water
  • 3 oz orange juice concentrate, thawed
  • 1/4 cup green onions, sliced
  • 1 ea chicken bouillon cube
  • 1/2 tsp garlic, minced
  • 3/4 cup parsley
  • 3/4 cup rice
  • 1 tbsp flour
  • 1/2 can mandarin orange, drained


  1. Cook rice according to package directions

  2. Brown chicken in small amount of oil. Set aside.

  3. Saute mushrooms in oil. Sprinkle with flour and stir to combine.

  4. Gradually stir in water, orange juice, green onions, and bouillon cube. Bring to a boil, while stirring constantly.

  5. Reduce heat and add chicken. Stir in mandarin orange sections.

  6. Heat until bubbly. Serve over rice.

Recipe Notes

In order to make this a freezer meal:

  • Cook sauce as directed (do not include mandarin oranges), but cool and put into freezer bag.
  • Do not cook rice or chicken until day of service
  • When serving, heat sauce until bubbly, stir in oranges and cooked chicken.

In case you were wondering if my kids liked it, yes and no. I have one picky kid every night, but it usually alternates between children. My daughter likes fewer foods, but my son hates when his food touches. On this night, my daughter refused to eat the chicken (not surprising), but my sonliked it.
